Ryazhenka is traditional fermented milk made from baked milk produced from lactic acid fermentation. Also known as soured milk or baked milk, this excellent product is made by pasteurizing milk followed by simmering under low over a period of 8 hours or more. It has a creamy/caramel color due to the reaction between the milk’s amino acids and sugars. It has a fat content of 4%, protein 3%, carbohydrate 5% and it is free from harmful bacterial permitting a shelve life of over 40 hours.
